Apple Pie Puffs

This right here was an accidental recipe. My grade level decided to make apple sauce with our kids but I never got the recipe for the apple sauce from the other teachers. I decided to wing it. Should be easy, right? It was. I just bought a bag of apples, threw in some sugar, cinnamon, and water into a crockpot, mashed it and voila… apple pie filling? Some staff tried it and their immediate response was, “This is so good! I’m having an apple pie without the crust!” Not going to lie, I felt pretty awesome when I heard that. Might not have been sauce but it was a great filling!
I chose to use the Aussie Bakery Puff Pastry and that was 2g of protein for 28g of the dough (I cut the dough and made mini shells out of each serving). What I recommend is if you can find the Athens premade phyllo shells you would be able to have 2 shells for 1g of protein. (Signature Select is also the same protein per serving.)
Ingredients
- 1324g or 12 Gala Apples
- 1/2 Cup Sugar
- 1/4 Cup water
- 1/2 Tbs Cinnamon
Directions
- Peel your apples.
- Cut apples into cubes.
- Toss them in a crockpot with sugar, water, and cinnamon.
- Cook on high for 3-4 hours.
- Mash to preferred consistency.
- Eat as is or scoop 1 Tsp into mini phyllo shells.
